Bachelor Cooking Night | My 180

This week has been full of food temptations. Cake at the office. Free samples sprinkled throughout the grocery store. Pizza commercials every 15 minutes. Not to mention that the past few nights I have been glued to the TV screen watching Food Network. (It’s kind of like porn for someone trying to eat healthy and loose weight.)  After a long day at the office, I could think of no better way than to spend my Friday night at home in a comfortable pair of sweatpants, hanging out with the dog and cooking up some Paleo awesomeness in the kitchen. I might be a bachelor, but I can cook!

Tonight’s recipes came from The Food Lovers Primal Palate. My friends Haley and Bill are committed to the Paleo lifestyle and are by far the most creative cooks I’ve come across. While a lot of health food ends up looking (and tasting) like dog food, every recipe I’ve tried from their blog tastes as great as it looks!  (I believe part of the fun of cooking is the presentation.) Haley and Bill are blessed with amazing creativity and photography skills. Just look at the pictures throughout the blog!  I’m truly thankful I stumbled upon their blog a few months ago because they have truly restored my passion and love for cooking.

Chocolate Chip Raspberry Mini Muffins: These will be the perfect way to start my mornings (though I must admit I’ve already eaten 2 of them tonight). Coconut Flour Pancakes with Fried Banana and Toasted Pecan Topping: I’ve been craving warm, fluffy pancakes for months. Eating Paleo means that unlimited pancakes from IHOP is a no go. These Coconut Flour Pancakes are grain, gluten and honestly, guilt free. Coconut Flour is a great source of protein as well. I topped these warm fluffy pancakes with a Fried Banana and Toasted Pecan Topping along with Organic Maple Syrup.
